Why do YouTube movie reviews reveal like/dislike in video thumbnail?
Why spoil whether the reviewer likes/dislikes the movie in the thumbnail?

Possibly because the headline doesn't matter and what matters is the context around the conclusion of the review which is why you would watch the video...
Furthermore the thumbnail itself sparks engagement because somebody could see that thumbnail and immediately want to click on it to comment that they are wrong/right to like or dislike.
