I think that it is because Google caches the leading search results at the edge so they can load instantly on mobile. If you add the ability to search by date you cannot possibly cache every variation of the top results, so the user experience would suffer.
Maybe they also rolled it out as a trial for a minute and saw that users don't want that functionality. There are many tests that Google runs that we might not be aware :-)
