Would a planet in deep space be visible to a space ship flying past it?

Are we talking a cheap & expendable little space probe, or something expensive and irreplaceable-ish?

The latter is likely to have a load of ultra-high-quality telescopes and sensor drones monitoring its neighborhood and trajectory, to minimize the risk of disastrous collisions.

I would have thought it would be too dark to see anything.
