Fiddler Alternatives

With the discussion about Postman[0] and alternatives available, I'm curious about Fiddler alternatives with Telerik going all-in on cloud-or-nothing. My use-case for Fiddler is as an administrator troubleshooting browser and non-browser apps with SSL interception and inspection as a requirement. My other requirements are being able to share results with others; exporting to SAZ would be perfecto, but another universal format is fine (HAR?).

Fiddler Classic is still amazing, but Windows only. I'm looking for a macOS (Arm) compatible tool with Windows as a bonus.
