Are NFTs still a thing? What’s the state of NFTs overall?

I don't have an answer, but I've often wondered if they're applicable for copyrighting original work? Or at least establishing dates of original creation, transfer, etc.

No. The overall state is that the suckers have dried up, and thus it is no longer even a plausible way to conduct money laundering.
