Recommendations on managing home server services?

Hey folks, for context I recently acquired a Wyse 5070 which uses 6W idle, and looking to replace an 2013 iMac as a home server (which idles at 36W!). So far so good.

I'm looking to install home servery stuff like shiori, plex, vpn server, syncthing, some homemade concoctions and am trying to decide between Portainer, Dokku, and Ansible.

Initially Portainer seemed to be the right tool for the job but with limited resources how many http and db services do I want to run concurrently on a 8GB RAM low power device? So the dokku concept of plugins appeals but I'd have to translate docker compose setups to a series of dokku steps. Ansible seems to be well supported as well and it can even manage portainer and dokku setups plus it makes the whole thing repeatable.

Also I might not have even mentioned your recommended tooling here. It's currently running ubuntu server and I've attached a 5TB disk for storage via USB.

Love to hear your thoughts!

I have been running a home Ubuntu server for many years. My most precious asset is a repo of cron scripts. I used to run all sorts of services but now I don't. I keep cloud, and cloud test stuff, in the cloud. Bar keeping Ubuntu up to date it looks after itself.

I have a Windows vm running on the box and can connect to it via VNC. No firewall ports open on my router. VNC provide the connection service. Access to the vm often saves my bacon when working in corporate environments.
