Should you disable SMS 2FA after adding a hardware key?
What do most people do? Two yubikeys: one for main and one backup, and no other 2FA? Or do you have Yubikey + OTP + SMS

Yes. I do Yubikey + TOTP only.
If you have to use SMS for a 2FA make sure you have your SIM Locked at your carrier with a pin.
