I want to try and focus on a single project until completion but finding it difficult to choose a particular one.
I'm thinking about using a matrix of categories such as potential income, desire, domain knowledge, ongoing expenses to determine which project to start on to try to strike a balance between keeping my interest in the project ongoing enough to complete the work and the potential for a successful project.
I'm defining successful as either generation of income, or profile-raising - which could lead to generation of income through employment opportunities.
how do you pick which projects to work on, and the one's that have been completed was the driver monetary or domain interest, or something else?

Make your roadmaps sharable! Ask friends and family for feedback :) It's much easier to prioritize projects with a little help. My wife tells me when my project plans are too lofty or unaligned with my goals.
Break your project roadmaps into 1-week "beats"! Seeing all your beats lined up together on a timeline will force you to FEEL how much time each project is going to take up in context. For example, do you want to write 10 self-contained short-stories or 10 sprints of an app prototype?
Choose your projects MONTHS in advance! Maintaining rough project timelines keeps your priorities consistent over time. If I'm still interested in a project by the time I get to it months later, it's a good sign that I'm committed to finishing (rather than passing curiosity).
Lately, I've been ignoring money/status projects and just going for fun low-hanging fruits on my list. I've been finding it more enjoyable to FINISH tiny things than to always be abandoning big things.
