Linux hackable device with E Ink display and WiFi

I'd like build a simple wall mounted computer that displays the current electricity price (hourly). What options I have if I do not want to start creating a custom Raspberry Pi chassis? Only WiFi + touch screen display needed.

M5stack Paper is $85 and has everything you ask for. You can go 50% cheaper with their CoreInk model if you don't really require the touch screen and can get by with a switch encoder.

Buy a (perhaps used) Android e-reader, e.g by Sony or Onyx, and write an app for it. Still easier, do without the app, instead point the e-reader's browser to an auto-updating web page which you host in your LAN on a raspi. (Or, if you are courageous and keep it really simple, perhaps even on an esp32 e.g. running micropython.) Edit: OK this is not exactly the approach you requested, as the e-reader does not really run Linux. But it works :)

Wouldn't an app be easier/cheaper to provide that just sits in the corner of your normal computer screen and displays the price?

That way you wouldn't need to duplicate all the hardware and software that a separate complete standalone machine would require.

If you start looking at costs for a home-grown separate machine, you'd probably find that a mass-produced computer (maybe one of those el-cheapo laptops) would be more suitable and end up cheaper.

There are price tags with E Ink and Wifi. Forgot the brand name. They cost around 2.5 $ each.
