Smoothest way to Remote Desktop from a Mac to local headless Ubuntu box?

I have a NUC in a closet running Ubuntu 20 with no monitor (but I have one those hdmi plugs in it that tricks it for resolution purposes).

It’s currently just a media server, but I’d like to run some scrapers and other projects on it, so I want a Remote Desktop that is as fast as possible. I currently use team viewer but it’s slow and latent and wouldn’t fly for any long term usage.

Any tricks here? I’m open to either doing some technical work to set something up or to pay for software to solve this

I use AnyDesk [0] to connect to my Linux media centre from OSX*. That's not headless though, so not sure if it would work for you

*Actually "used". It no longer works since I switched from Ubuntu to Manjaro

Mac has a built in app called Screen Sharing that requires VNC to be setup and running on your Nuc. I did the same thing in fact. I wasn't able to find another way that was superior and the experience wasn't bad.
