I'm trying to become productive with Android work profiles but keep stumbling over things like widgets accessing the private profile even though the work profile is active or the launcher not differentiating between profiles. What is your setup?

Use a different user. GrapheneOS can forward notifications from background to active user.
I also use a separate phone for my side business and ignore my work-provided phone 99% of the time cause I'm not on-call.
Siloing the data on your device is a good idea, be sure to silo your time properly.
