How to restaurant tablet integrators work? (engineering wise)


I've seen solutions like: https://www.yourfareinc.com/tablet-solution and https://www.tryotter.com/products/order-management that seem to make a restaurant's life easier by integrating all the tablets they would-have from all the delivery apps into a single one.

How do they do this at a high level? Do they have to have some sort of tablet farm where they install the apps and somehow intercept network traffic (after logging in as the restaurant in each app)? Are there official APIs from the delivery apps?

Seems like magic and I would like to have an idea on how they work.

Thought I'd plug my friend's company (a former boss and cofounder of my previous work): Table Needs

Instead of a tablets and kiosks, you order on your phone with the app. I've not inquired however how they do receipts. I'd imagine a webhook to the printer or a computer plugged into the printer.
