A serious answer from me would be how to ask for help when stuck on a problem or understanding a topic. A lot of students (me included) will leave school with the impression that it's always better to grind through and figure things out oneself, and that asking for help is a sign of failure.
Off the top of my mind so a bit random:
* the tax system
* (more in-depth) anatomy and nutrition
* interpersonal ethics
* practical/exploratory math
Some mental health tips would have help a lot. Maybe I would have avoided so many burn outs.
