What some good sites to learn the science behind cooking?


I have just started learning cooking and the working of Pressure cooker got me intrigued towards the science behind it. I have already found a few sites and will appreciate any recommendations from HN.

Pre-internet, I got my food science from Cook’s Illustrated magazine (paper). If you can score some bound annuals at a thrift store or on eBay, it’s a worthy dive.
