Why GitHub is not Open source?

Microsoft is for-profit company who paid good money for GitHub. Why would they open source it?

There are alternatives, https://gitlab.com/ for example.

Why lay your cards on the table unnecessarily, however worthless those cards might be? Only businesses looking to get on the map need to open-source.
