"Don't deploy on a Friday" is a signal that you believe your deployment process can catastrophically fail without being easy to roll back. Rather than being afraid of Friday deploys, build a deployment process that you trust enough to use whenever you want to.
It could still fail sometimes, because even the most redundant system can, but being afraid of deployments is a bigger problem for a business than downtime when it goes wrong.
