Best iPad App for Handwritten Notes?

I am embarking on a little project with my old and sick father-in-law, helping him write down notes of his past.

I would like to use an app on an iPad that allows him to take handwritten notes, using Apple Pencil 2. (these were my early Christmas presents for him).

I've been trying using Apple's "Notes", which seems ok. But I'm wondering if there's something else out there that uses a better file format, and allows for more flexible integration between normal text (meaning: keyboard input) and handwritten notes (or should I say Apple-pencil-written?).

Thanks for any pointers.

Edit: I've looked online, and found lists like this [0]. But it seems quite hard to discern whether an app is a good match for what I'm trying to do.

For your usecase:

In terms of integration between handwritten and typed notes, if you don't like what Apple Notes does, you might want to give Nebo a try. It's a lot less flexible in terms of handwriting, but said restrictions are to help transcribe your handwritten notes to typed text if you want it. It's also a cross-platform option with Android.

Handwritten notetaking in general:

All apps use proprietary formats, but they're all generally capable of exporting to PDF for archiving purposes if need be.

Notability and GoodNotes are good staple options. I personally like ZoomNotes myself, it has a worse looking UI but it has a lot more features.

OneNote is fairly special, because I find it the best cross-platform solution (Android and iOS, desktop is a bonus). I feel that Samsung and Huawei tabs have been getting a lot better over time, despite there being few people talking about them.
